Messy Cake

Ingredients:

200g caster sugar

200g softened butter

4 eggs, beaten

200g self-raising flour

1tsp baking powder

Method:

1.  Heat the oven to 180o. Butter two 20 cm sandwich tins and line with non-stick baking paper.

2. In a large bowl cream together the butter and sugar until creamy. Then add eggs, self-raising flour and baking powder together. Mix well until smooth, soft batter. (To make it more of the messy cake you can add two food colour in as-well.)

3.Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon. Bake for about 20mins until golden and the cake springs back when pressed.

4. Turn onto a cooling rack and leave to cool completely.

5. To make it a messy cake, you make icing with icing sugar and water. Make it quite thick and colour it as you wish. Then dollop it onto the cake and make it stick up and messy. Add what you wish.
